SWEET POTATO TOAST
While normal toast spikes blood sugar levels and can lead to insulin resistance, sweet potatoes is at the other end of the spectrum. Besides it overflowing levels of fibre, it is full of vitamin A, beta-carotene and makes for a delicious substitute!
- 1 sweet potato
- Sofia Spicy Seasoning
What you need:
- Slice the sweet potato lengthways in 5mm pieces and lay on a baking tray. Spray with coconut oil or drizzle with a little bit of olive oil and bake for 20 minutes at 200c.
- Serve with sliced avocado and some Sofia seasoning
