How good is crispy sweet potato skin? And did you know that science suggests most of the beta-carotene in sweet potatoes are actually in their skin?! Plus, you can use the leftover flesh for our bangers and mash recipe 😉


    What you need:
  • 1 medium sweet potato (preferably organic)
  • 1/2 an avocado
  • 400 g chicken mince
  • 1 corn on the cob
  • 3 spring onions, cut
  • Handful of thinly sliced purple cabbage
  • 1/2 tomato, diced
  • 1 Lebanese cucumber, diced
  • 1 tbsp coconut oil
  • 2 tbsp Sass Smokey Seasoning
  • cheese to serve (optional)
    How to make:
  • Preheat the oven to 180c and bake your potatoes whole for 1 hour or until soft in the middle
  • Meanwhile, heat the coconut oil in a fry pan and brown the chicken mince and Sass Smokey Seasoning. Cut the corn off the cob and add to the chicken mince and continue to cook.
  • Once the potatoes are cooked, remove them from the oven and slice in half (lengthways) and scoop out some of the flesh.
  • To assemble the potatoes, firstly put chicken mince inside the skin, then add cabbage, cucumber, corn, avocado, spring onions, tomato and cheese (optional)
