These muffins are perfect for dipping into some hearty soup

    What you need:
  • 300ml coconut milk
  • 1/2 cup olive oil
  • 2 cups almond meal
  • 1 cup brown rice flour
  • 3 eggs
  • 1 tsp bi-carb soda
  • 2 tbsp Sammy all purpose seasoning
  • 1 small carrot, grated
  • 1 head of broccoli, diced
  • 100g of spinach
    How to make:
  • Preheat the oven to 180c and prepare a muffin tray
  • Sift the rice flour into a bowl and add the remaining ingredients besides the spinach.
  • In a small frypan sauté the spinach with a dash of coconut oil until soft and then stir into the batter
  • Cook for 30 minutes until a skewer comes out clean when placed into the centre of the muffins
  • Serve with a bowl of soup
