BEEF POT PIES

We are all about #balance here in the Mingle kitchen, so choosing high-quality pastry that doesn’t contain vegetable oils is a-okay. If it’s gluten free also, then it’s a win-win. (Butter is totally fine in the ingredients)

This brand ( Carame Pastry) is great, and they even have gluten free! 

    What you need:
  • 1 tbsp coconut oil
  • 1/2 red or brown onion
  • 500g beef mince
  • 1 Tbsp Siena Seasoning
  • 1 heaped Tbsp tomato paste
  • 2 tsp tapioca flour
  • 1/4 cup bone broth or stock
  • 1/4 cup chopped flat leaf parsley
  • 1 tsp salt
  • 1 sheet of good-quality pasty (check for vegetable oil, butter in the ingredients is ideal...see notes above)
    How to make:
  • Preheat the oven to 180c
  • Heat the coconut oil in a medium fry pan and sautee the brown onion until translucent. Add the beef and break up using a flat ended wooden spoon. Cook until browned
  • Add the Siena, tomato paste and broth and mix well to combine. Add the tapioca flour and parsley and mix well.
  • Stir through the salt and then place the mince into two pot-pie dishes. Cover with pastry and cook for 20-30 minutes or until golden
