MEXICAN FAJITA BOWLS

The perfect 10-minute dinner that hits all the right keys. Guac, healthy chips and caramelised onion.

    What you need:
  • 1 Tbsp coconut oil
  • 1 Brown onion, sliced
  • 1 red capsicum, sliced into sticks
  • 1 green capsicum, sliced into sticks
  • 2 tbsp water
  • 1 Tbsp sofia
  • 1 Spelt wrap
  • 1/2 an avocado
  • 1/2 red onion, diced
  • 1/4 cup coriander, diced
  • 1/2 lime, juiced
  • 1 tsp salt, 1/2 tsp pepper
  • 1/4 cup natural coconut yoghurt, greek yoghurt or sour cream
    How to make:
  • Heat the oven to 180c and line a baking tray
  • In a pan, sautee the coconut oil, onion and capsicums with the water and spices until soft and caramelised
  • Place the spelt wrap in the oven for 5-10 minutes or until crispy
  • To make the guac, mash the avocado, red onion, coriander, salt and pepper and lime juice until combined.
  • To serve, crack the spelt wrap into 'chips' and serve with the Fajita mix, guac and the coconut yoghurt. Season well with salt and pepper
