EGGPLANT PARMI

Life gets good when you can make a dish without the refined carbs and it tastes amazing

Just be sure to check your Napoletana sauce for hidden sugar and vegetable oil! 

Serves 2 as a side

    What you need:
  • 1 eggplant, sliced into 1 cm rounds
  • 2 cups Napoletana sauce (check for hidden sugar and vegetable oil)
  • 2 Tbsp siena
  • 1 cup ricotta cheese
  • 1 cup basil leaves to serve
    How to make:
  • Preheat the oven to 180c. Place the eggplant pieces into an oven proof dish and top with the sauce, Siena and ricotta
  • Bake for 40 minutes until eggplant is soft and ricotta is starting to get golden
