EGGPLANT HOT POT

This is the perfect winter side to a piece of fish or chicken

    What you need:
  • 3 Tbsp coconut oil
  • 2 tbsp Sass smokey seasoning
  • 1 red onion, cut into slices
  • 2-3 eggplants, sliced vertically
    How to make:
  • Preheat the oven to 160c
  • Place the eggplant, red onion, coconut oil and seasoning into a over proof dish with a lid and cover and cook for 1 hour and 15 minutes
