CLASSIC PUMPKIN SOUP

Making pumpkin soup just got easier 😉

    What you need:
  • 1 butternut pumpkin, cut into small cubes
  • 3 tbsp of ghee
  • 2 Tbsp Siena
  • 1 brown onion, diced
  • 1 L bone broth
  • 1/4 cup nutritional yeast
  • squeeze of lemon juice
    How to make:
  • Sautee the ghee, onion and Siena in a large pot until fragrant.
  • Add the pumpkin and broth and bring to the boil. Let it simmer for 20 minutes or until pumpkin is very soft
  • Turn off the heat and blend using a hand held stick blender. Add the nutritional yeast and lemon juice and blend again
  • Season with salt and pepper
