Broccoli, you either hate or love it and for those who aren’t a fan usually it’s because of some horrible experience as a kid where you were forced to eat your over steamed, tasteless greens. But we can assure you, broccoli CAN be delicious and tasty. So here are our top 3 ways to mingle with broccoli!

Broccoli Pesto

There’s no better way to get some extra greens into your diet then by adding them to a pesto! Try this creamy variation on a traditional basil pesto. If your stomach can tolerate it, even add some parmesan to it!
Serving suggestions: with your eggs, salad, on zoodles, mixed through a veggie dish.

Charred Cheesy Broccoli

Another way to make your veggies taste delicious! Veggies are not meant to be boring. In fact, traditionally, we always ate our veggies with tonnes of saturated fats because they make nutrients more bio-available and anti-inflammatory. So basically, a meal complete with animal fat actually can help up to absorb and taste other nutrients.

Moroccan Broccoli Rice

With summer in full swing and BBQ’s happening so quickly you are loosing track, this fast, simple and delightful broccoli rice can be used in so many ways. Toss it with just about anything and you’ll have yourself something remarkable.
Serving suggestions: Use for a tabouli, mix into a salad, serve as a side with some pistachios through it!

    What you need:
  • Broccoli pesto:
  • 600g broccoli florets
  • 1/4 cup hazelnuts
  • 1 Tbsp lemon rind
  • 1/3 cup lemon juice
  • 1 1/4 cups extra virgin olive oil
  • 2 tsp Siena garlic and herb
  • Charred Cheesy Broccoli:
  • 2 heads broccoli, cut into florets
  • 1 tbsp ghee (can sub for coconut oil)
  • 1/4 cup nutritional yeast, or 1/4 cup grated cheddar or parmesan cheese
  • Siena garlic and herb or Sammy all purpose
  • Moroccan Broccoli Rice:
  • 2 heads of broccoli, cut into florets *
  • 2 tbsp Sahara Moroccan seasoning
  • 1 tsp coconut oil
    How to make:
  • Broccoli pesto:
  • Preheat the oven to 200c. Bake the broccoli in the oven for 15 minutes or until just tender. Let cool slightly.
  • Combine all the ingredients in a food processor and process until combined.
  • Charred Cheesy Broccoli:
  • Preheat the oven to 200c.
  • Lay the broccoli out on the tray and drizzle with melted ghee and sprinkle with nutritional yeast and your choice of Siena or Sammy. OR just cover with parmesan/cheddar cheese and sprinkle with seasoning.
  • Bake for 15 minutes or until golden and crispy.
  • Moroccan Broccoli Rice:
  •  In a food processor, blitz the broccoli until rice size bits form. Do not over blitz.
  • Heat the coconut oil in a medium fry pan and add rice and Sahara. Mix well and cook for 3-5 minutes or until just cooked.
